A simple yet elegant summer salad featuring caramelized grilled peaches, creamy burrata cheese, fresh basil, and a balsamic glaze. This dish highlights the contrast between hot fruit and cool cheese for a perfect balance of flavors.

Ingredients

  • 4–6 large ripe peaches (yellow preferred for structure)
  • 1 large ball of fresh burrata cheese (approx. 8–10 oz)
  • 1 cup fresh basil leaves, loosely packed
  • 2–3 tbsp extra virgin olive oil
  • 2–3 tbsp balsamic glaze or reduction
  • Fleur de sel or flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tbsp toasted pine nuts or walnuts (optional)

Instructions

  1. Wash peaches, cut in half, remove pits, and brush both sides lightly with olive oil.
  2. Preheat grill to medium-high heat (400-450°F / 200-230°C) and clean grates.
  3. Place peaches cut-side down on the grill. Do not move for 2-3 minutes to allow caramelization and char marks.
  4. Flip peaches and grill for another 1-2 minutes until heated through and slightly softened. Remove and let cool slightly.
  5. Whisk together 2 tbsp olive oil, 1 tbsp balsamic vinegar, a pinch of salt, and pepper to make the dressing.
  6. Arrange grilled peaches on a large platter. Tear burrata into rustic chunks and place in center or among peaches.
  7. Drizzle dressing generously over the salad.
  8. Tear fresh basil leaves by hand and scatter over the top. Finish with flaky salt, pepper, and optional nuts.
  9. Serve immediately while peaches are warm and cheese is cool.

Notes

Ensure peaches are ripe but firm to hold their shape on the grill. Handle burrata gently with hands or two spatulas to avoid breaking it apart. Serve immediately to maintain the temperature contrast between hot peaches and cool cheese. If burrata is unavailable, fresh mozzarella is a substitute. For a vegan option, use plant-based burrata alternatives.
