These healthy no-bake granola bars are quick, easy, and made with simple pantry ingredients. Perfect for busy mornings, lunchboxes, or a post-workout snack, they’re chewy, slightly sweet, and packed with texture.

  • 2 cups rolled oats (not quick oats)
  • 1/2 cup creamy peanut butter (natural preferred)
  • 1/3 cup honey
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (e.g., dark chocolate chips and dried cranberries)

Instructions

  1. Line an 8×8 inch baking pan with two overlapping strips of parchment paper, leaving overhang on all sides.
  2. In a small saucepan over low heat, warm 1/2 cup peanut butter, 1/3 cup honey, and 2 tablespoons coconut oil, stirring constantly for 2-3 minutes until smooth and glossy. Do not let it boil.
  3. In a large bowl, combine 2 cups rolled oats, 1/4 teaspoon salt, and your chosen mix-ins.
  4. Pour the warm peanut butter mixture over the oats. Add 1 teaspoon vanilla extract. Stir with a spatula until every oat is coated. If too dry, add a tablespoon of warm water; if too wet, add a tablespoon of oats.
  5. Transfer the mixture to the lined pan. Place a second piece of parchment paper on top and press down firmly with your hands or the bottom of a glass for about a minute.
  6. Refrigerate for at least 2 hours, or until firm (overnight is best).
  7. Lift the parchment sling out of the pan. Place on a cutting board and cut into 12 even bars with a sharp knife, wiping the knife clean between cuts.

Notes

Toast the oats at 350°F for 8-10 minutes for a nuttier flavor. Press the mixture firmly into the pan to prevent crumbling. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months. For nut-free version, use sunflower seed butter. For vegan option, swap honey for maple syrup.
