  • ⅓ cup (80ml) maple syrup
  • ⅓ cup (75g) virgin coconut oil, melted
  • 1 tsp vanilla extract
  • 1 large egg (or flax egg for vegan adaptation)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Shred 1 medium zucchini using a grater. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Stir until evenly distributed.
  4. In a separate bowl, whisk together maple syrup, melted virgin coconut oil, vanilla extract, and egg until smooth and glossy.
  5. Add the squeezed zucchini and shredded coconut to the wet mixture. Stir gently to combine.
  6. Pour the wet mixture into the dry ingredients. Use a spatula to fold everything together until just mixed—do not overmix.
  7. Fold in dark chocolate chunks.
  8. Using a tablespoon or cookie scoop, drop rounded spoonfuls onto the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 12–15 minutes, or until edges turn golden and tops feel set but still soft in the center.
