  • 2 tablespoons packed brown sugar

  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 or 9×9 baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into ¼-inch thick slices.
  3. In a large bowl, toss the sliced apples with ¼ cup granulated sugar, 2 tablespoons brown sugar, 2 tablespoons flour, 1½ teaspoons cinnamon, lemon juice, and vanilla extract. Let sit for 5 minutes.
  4. In a medium bowl, whisk together the rolled oats, ¾ cup flour, ½ cup brown sugar, ¼ cup granulated sugar, 1 teaspoon cinnamon, and salt. Add the cold butter cubes and cut in with a pastry cutter or your fingertips until the mixture resembles coarse crumbs with some larger clumps.
  5. Pour the seasoned apples into the prepared baking dish and spread into an even layer. Sprinkle the oat crumble topping evenly over the apples.
  6. Place the dish on a baking sheet and bake for 40-45 minutes, until the topping is deep golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil after 30 minutes.
  7. Cool for at least 15 minutes before serving. Serve warm with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes
