A quick and easy summer dessert featuring juicy grilled nectarines glazed with honey and topped with creamy goat cheese, offering a perfect balance of sweet, smoky, and tangy flavors.

  • 4 medium ripe but firm nectarines
  • 2 tablespoons honey (preferably floral or wildflower)
  • 4 ounces creamy goat cheese, at room temperature
  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves (optional)
  • Pinch of salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Halve and pit the nectarines. Brush the cut sides lightly with olive oil and drizzle with fresh lemon juice.
  2. In a small bowl, whisk honey with thyme leaves, salt, and freshly cracked black pepper. Set aside.
  3. Preheat grill or grill pan to medium-high heat.
  4. Place nectarines cut side down on the grill. Cook for 3-4 minutes until grill marks appear and fruit softens slightly but holds shape.
  5. Flip and cook for another 2-3 minutes on the skin side.
  6. Remove nectarines from grill and immediately brush cut sides with honey-thyme glaze.
  7. Arrange nectarines on a serving dish and dollop or spread goat cheese on top of each half.
  8. Drizzle any remaining honey glaze over the cheese and nectarines. Optionally garnish with extra thyme leaves or cracked black pepper.

Notes

Use ripe but firm nectarines to avoid mushiness. Brush olive oil on cut fruit to prevent sticking. Medium-high heat is ideal to avoid burning sugars. Serve immediately for best texture. For vegan option, substitute goat cheese with plant-based cheese and honey with maple syrup.
