Instructions

  1. Brown the Butter: In a small saucepan over medium heat, melt the ½ cup butter. Stir frequently as it foams and then browns, releasing a nutty aroma (about 5 minutes). Remove from heat once golden brown with brown flecks and let cool slightly.
  2. Make the Dough: In a large bowl, whisk together flour, salt, and sugar. Pour in the warm brown butter and mix until coarse crumbs form. Add ice water one tablespoon at a time, stirring gently until dough just comes together. Avoid overworking.
  3. Chill the Dough: Shape dough into a flat disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Prepare the Apples: Peel, core, and thinly slice apples (about 1/8 inch thick). Toss with brown sugar, cardamom, cinnamon, vanilla extract, and flour.
  5. Roll Out the Dough: On a lightly floured surface, roll chilled dough into a 12-inch circle about 1/8 inch thick. Transfer to a parchment-lined baking sheet.
  6. Assemble the Galette: Arrange apple slices in the center of the dough, leaving a 2-inch border. Fold edges of dough over apples, pleating gently to create a rustic edge.
  7. Brush and Sprinkle: Brush apples and exposed dough with melted butter. Sprinkle cardamom sugar evenly over fruit and crust edge, then lightly sprinkle coarse sea salt.
