Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 16 oz (450g) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 2 tablespoons unsalted butter, melted (for topping)
  • ¼ cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until crumbs are evenly coated and clump together when pressed.
  3. Press the crust mixture firmly and evenly into the prepared pan. Bake for 10 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, beat softened cream cheese with sugar until smooth and creamy, about 2-3 minutes. Scrape down the bowl to avoid lumps.
  5. Beat in eggs one at a time, mixing just until combined after each addition. Stir in vanilla extract and sour cream until silky and uniform.
  6. Pour the cheesecake filling over the slightly cooled crust and smooth the top with a spatula.
  7. In a small bowl, combine melted butter, sugar, and cinnamon for the topping. Drizzle or dollop over the filling and swirl lightly with a toothpick or knife if desired.
  8. Bake for 35-40 minutes, or until edges are set and center jiggles slightly when shaken gently.
  9. Cool bars on a wire rack for 1 hour, then refrigerate for at least 3 hours or overnight to set firmly and keep crust crisp.
  10. Slice with a sharp knife, wiping clean between cuts. Serve chilled or at room temperature.

Notes

Use room temperature cream cheese and eggs to avoid lumps and cracks. Chill bars overnight for best texture and crisp crust. Swirling the cinnamon sugar topping is optional but adds a nice visual and flavor touch. For dairy-free or gluten-free versions, substitute ingredients as noted in the recipe.
