  • 34 lbs boneless turkey breast
  • 2 tbsp fennel seeds, toasted and crushed
  • Zest of 1 orange
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • Kitchen twine
  • Optional: crushed red pepper flakes or smoked paprika

Instructions

  1. Butterfly the turkey breast: Lay the turkey breast flat on a cutting board. Using a sharp knife, carefully slice horizontally through the thickest part, stopping just before cutting all the way through. Open it up like a book and flatten it with a meat mallet until it’s even in thickness.
  2. Prepare the herb mixture: In a bowl, combine 2 tbsp toasted and crushed fennel seeds, the zest of 1 orange, 2 tbsp chopped fresh rosemary, 1 tbsp chopped thyme, 4 minced garlic cloves, 2 tbsp olive oil, 1 tsp salt, and 1/2 tsp pepper. Mix well.
  3. Season the turkey: Spread the herb mixture evenly over the inside of the butterflied turkey breast. Make sure to cover every corner for maximum flavor.
  4. Roll and tie: Starting at one end, roll the turkey tightly into a cylinder. Use kitchen twine to tie the roll at 1-inch intervals to secure it.
  5. Preheat the oven: Set your oven to 375Β°F (190Β°C). Place the rolled turkey on a roasting rack inside a pan.
  6. Roast the turkey: Roast the porchetta for 60-75 minutes, or until the internal temperature reaches 165Β°F (74Β°C). Check about 45 minutes in and baste with pan juices for extra moisture.
  7. Rest before slicing: Once cooked, remove the turkey porchetta from the oven and let it rest for 10 minutes. This allows the juices to redistribute for tender, juicy slices.
  8. Slice and serve: Use a sharp knife to cut the porchetta into thick slices. Serve warm and enjoy!
