These Light & Lively Cranberry Brie Bites are the perfect easy appetizer for any gathering. With crispy phyllo cups, creamy melted brie, and a sweet-tart cranberry topping, they come together in under 25 minutes and are always a crowd-pleaser.

Ingredients

Scale
  • 2 boxes (15 cups each) frozen phyllo cups
  • 8 ounces brie cheese, cold
  • 1 cup whole berry cranberry sauce
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons honey
  • Pinch of flaky sea salt
  • Fresh cranberries for garnish (optional)
  • Additional rosemary sprigs for garnish (optional)
  • 1/4 cup chopped pecans or walnuts, toasted (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Take the phyllo cups out of the freezer and arrange them on a baking sheet, keeping them in their foil trays and spaced apart.
  3. Cut the cold brie into small cubes, about 1/2 inch (1.25 cm) each, leaving the rind on. Keep the cubes cold.
  4. In a small bowl, combine the whole berry cranberry sauce, chopped fresh rosemary, and honey. Stir until well combined.
  5. Place 2-3 cubes of brie into each phyllo cup. Spoon about 1 teaspoon of the cranberry mixture on top of the brie.
  6. Bake for 10-12 minutes, until the brie is melted and bubbly and the edges of the phyllo cups are golden brown.
  7. As soon as the bites come out of the oven, drizzle a tiny bit of honey over each one and finish with a pinch of flaky sea salt. If using nuts, sprinkle them on now.
  8. Let the bites rest for 2-3 minutes before serving.
  9. Transfer to a serving platter, garnish with fresh cranberries and rosemary sprigs if desired, and serve warm.

Notes

For best results, keep brie cold until cutting and assemble bites just before baking. The cranberry mixture can be made ahead and stored in the fridge for up to a week. To prevent soggy cups, ensure cranberry sauce is cool and place it on top of the brie, not directly on the phyllo. Bites can be assembled up to 2 hours ahead and refrigerated; add 1-2 minutes to baking time. Freeze unbaked bites for up to 1 month; bake from frozen, adding 2-3 minutes.
