Ingredients

Scale
  • 4 ripe avocados
  • 1 lime, juiced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 cup finely diced red onion
  • 1 small jalapeño, seeded and finely chopped
  • 1/4 cup chopped fresh cilantro
  • 4 slices thick-cut bacon, cooked crisp and crumbled
  • 1/2 cup crumbled queso fresco cheese
  • 1 cup halved cherry tomatoes
  • 1/4 cup sliced pickled jalapeños
  • 1/3 cup pumpkin seeds (pepitas), lightly toasted
  • 2 stalks green onion, thinly sliced

Instructions

  1. Prepare the Bacon and Pepitas (about 10 minutes): Cook bacon in a skillet over medium heat until crisp, about 6-8 minutes. Transfer to paper towel-lined plate to drain and crumble once cool. Using the same skillet, toast pepitas for 3-4 minutes, stirring frequently until lightly browned and fragrant. Set aside.
  2. Chop the Fresh Ingredients (5 minutes): Dice red onion finely, halve cherry tomatoes, slice pickled jalapeños, chop cilantro, and thinly slice green onions and fresh jalapeño. Keep organized in small bowls or on a plate for easy topping assembly.
  3. Mash the Avocados (5 minutes): Cut avocados in half, remove pits, and scoop flesh into a mixing bowl. Add lime juice, salt, and pepper. Use a fork to mash, leaving some chunks for texture. Fold in diced red onion, fresh jalapeño, and cilantro gently. Taste and adjust seasoning if needed.
  4. Assemble the Guacamole Board (5 minutes): Spread mashed guacamole onto serving board or platter, creating a shallow well or rustic mound in the center. Arrange the six toppings in separate piles or artfully scattered over and around the guacamole.
  5. Final Touches: Sprinkle sliced green onions over the top and add a few extra lime wedges on the side. Serve immediately with tortilla chips or crunchy veggies.

Notes

Keep guacamole base airtight with plastic wrap pressed directly on the surface to prevent browning if prepping ahead. Add toppings just before serving for best texture. For vegetarian option, substitute bacon with smoked paprika roasted chickpeas. For dairy-free, substitute queso fresco with seasoned firm tofu. Use fresh lime juice for best flavor and to prevent browning. Toast pepitas in bacon fat for extra flavor if desired.
