  • ½ cup (120 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups (about 2 medium) grated zucchini, squeezed dry
  • ¾ cup (135 g) semisweet chocolate chips
  • ¾ cup (80 g) toasted and chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or line it with parchment paper.
  2. Grate the zucchini using a box grater. Place it in a clean kitchen towel and gently squeeze out excess moisture.
  3. Toast the walnuts by spreading them on a baking sheet and baking for 8–10 minutes until fragrant. Let cool and chop roughly.
  4. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. In another bowl, whisk the sugar, vegetable oil, eggs, and vanilla extract until smooth and slightly thickened.
  6. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  7. Fold in the squeezed zucchini, chocolate chips, and toasted walnuts using a spatula.
  8. Pour the batter into the prepared loaf pan and smooth the top. Tap the pan gently to release air bubbles.
  9. Bake for 55–65 minutes. Check doneness by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter. Tent with foil if top browns too quickly.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
