  • 3 oz Spanish chorizo

  • 1/2 cup fresh fruit (seedless red grapes, sliced apple, pear, or fresh figs)
  • 2 tbsp dried fruit (apricots, figs, or cherries)
  • 2 tbsp nuts (Marcona almonds, toasted walnuts, or pecans)
  • 2 tbsp olives (Castelvetrano, kalamata, or cerignola)
  • 2 tbsp honey or fig jam
  • 2–3 cornichons or pickled veggies

Instructions

  1. Take the cheese out of the fridge 15 minutes before serving to let it come to room temperature.
  2. Choose a small wooden board or plate (about 8×10 inches) that fits the ingredients comfortably.
  3. Place the cheeses on the board first, positioning them at different spots. Slice Gouda into thin triangles or cubes and fan them out. Place the goat cheese log whole or sliced into rounds. Leave Brie in a wedge.
  4. Add the meats: fold or roll prosciutto into loose ribbons and place near one cheese. Fan out salami slices in a line or small pile.
  5. Fill in with crackers, arranging them in small clusters around the board, especially near each cheese.
  6. Add fresh and dried fruit, tucking grapes or apple slices into gaps and sprinkling dried apricots or figs around.
  7. Place nuts and olives in remaining empty spots. Put olives in a small ramekin or pile them neatly in a corner.
  8. Add sweet and tangy elements: spoon honey or fig jam into a small bowl near the goat cheese or Brie. Place cornichons next to the salami or prosciutto.
  9. Finish with optional garnishes like fresh rosemary sprigs, edible flowers, or a sprinkle of flaky sea salt over the cheese.
  10. Serve immediately with small plates, napkins, and cheese knives.

For best flavor, let cheese sit at room temperature for 15-20 minutes before serving. Use small bowls for sticky or wet items like olives, honey, and jam to keep the board neat.
