Perfect Roasted Fig and Gorgonzola Flatbread

A quick and easy flatbread featuring roasted figs, tangy Gorgonzola, and salty prosciutto on a crispy flatbread base, perfect for a comforting appetizer or light dinner.

  • 1 large store-bought flatbread or naan (1012 inches)
  • 68 ripe fresh figs, halved
  • 4 ounces Gorgonzola cheese, crumbled
  • 46 thin slices prosciutto, torn into bite-sized pieces
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • 1 tablespoon honey, for drizzling
  • Fresh cracked black pepper, to taste
  • Sea salt, a pinch

Instructions

  1. Preheat oven to 400°F (200°C) and place a baking sheet or pizza stone inside to heat.
  2. In a mixing bowl, toss fig halves with 1 tablespoon olive oil, chopped rosemary, sea salt, and cracked black pepper.
  3. Spread figs cut side up on a parchment-lined baking sheet and roast for 12-15 minutes until soft and caramelized.
  4. Brush flatbread lightly with remaining olive oil. Place on preheated pizza stone or baking sheet and bake for 5-7 minutes until beginning to crisp.
  5. Remove flatbread from oven and evenly scatter roasted figs, crumbled Gorgonzola, and torn prosciutto over the top.
  6. Return flatbread to oven and bake for another 7-10 minutes until cheese is bubbling and slightly golden.
  7. Drizzle honey over the flatbread and add more cracked black pepper if desired.
  8. Slice into wedges and serve warm.

Notes

Roast figs separately to avoid soggy crust. Use room-temperature Gorgonzola for even melting. Tear prosciutto into pieces for better crisping. Drizzle honey at the end for balanced flavor. Reheat leftovers in oven to maintain crispness.
