  • ½ cup heavy cream
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon pure vanilla bean paste
  • Pinch of salt

Instructions

  1. In a large bowl, gently toss strawberries, blueberries, and raspberries with sugar, cornstarch, lemon zest, lemon juice, and cinnamon. Set aside to macerate.
  2. Preheat oven to 375°F (190°C) and position rack in the middle.
  3. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add cold, cubed butter.
  4. Cut butter into flour mixture using a pastry cutter or two forks until coarse crumbs form with some pea-sized bits.
  5. Stir in milk and beaten egg just until combined; do not overmix.
  6. Pour berry mixture into a 9×9-inch baking dish, spreading evenly.
  7. Drop spoonfuls of cobbler dough over the berry filling, leaving some gaps.
  8. Lightly sprinkle coarse sugar over the dough.
  9. Bake for 35-40 minutes until topping is golden brown and filling bubbles around edges. Cover loosely with foil if topping browns too fast.
  10. While baking, whisk milk, heavy cream, sugar, cornstarch, vanilla bean paste, and salt in a small saucepan over medium heat until sauce thickens (5-7 minutes). Do not boil. Remove from heat and cool slightly.
  11. Let cobbler cool 10-15 minutes before serving warm with creamy vanilla sauce drizzled on top.
