  • 2 cups fresh strawberries, sliced
  • 6 large eggs, room temperature
  • 1 ½ cups whole milk (or almond milk for dairy-free option)
  • ¾ cup champagne (dry brut recommended)
  • ½ cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • Pinch of salt
  • Powdered sugar, for dusting
  • Maple syrup, for serving

Instructions

  1. Cube brioche into 1-inch pieces and slice strawberries. Place bread cubes evenly in a 9×13-inch baking dish and scatter strawberry slices on top.
  2. In a large bowl, whisk together eggs, milk, and champagne until smooth. Add sugar, vanilla extract, cinnamon, and salt. Whisk until fully combined and sugar begins to dissolve.
  3. Pour custard mixture evenly over bread and strawberries. Gently press down to ensure bread soaks up custard. Cover tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
  4. Preheat oven to 350°F (175°C) about 30 minutes before baking.
  5. Remove plastic wrap and bake uncovered for 45-50 minutes until top is golden brown and custard is set. Tent with foil if top browns too quickly.
  6. Let cool for 10 minutes. Dust with powdered sugar and serve warm with maple syrup.

Notes

Use day-old brioche for best soaking results. Refrigerate the assembled bake for at least 4 hours or overnight for a tender custard texture. Tent with foil if top browns too quickly. Frozen strawberries can be used if thawed and drained well. For dairy-free, substitute milk and bread accordingly. Non-alcoholic versions can replace champagne with sparkling grape juice or orange juice.
