  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 9 ounces (250 grams) of cheese-filled tortellini and cook according to package instructions, typically 3-5 minutes for fresh tortellini. Drain and set aside, reserving about 1/4 cup (60 ml) of pasta water.
  2. In a large skillet over medium heat, melt 2 tablespoons (28 grams) of butter. Add 2 minced garlic cloves and sauté for about 30 seconds until fragrant but not browned.
  3. Add 1/3 cup chopped sun-dried tomatoes and cook for 1-2 minutes to warm through and infuse the butter.
  4. Pour in 1 cup (240 ml) heavy cream and 1/2 cup (120 ml) chicken broth. Stir gently to combine and bring to a low simmer. Let the sauce reduce slightly for 3-4 minutes until it thickens enough to coat the back of a spoon.
  5. Stir in 1/2 cup (45 grams) freshly grated Parmesan cheese until melted and smooth. Season with salt, black pepper, and a pinch of red pepper flakes if using. Taste and adjust seasoning as needed.
  6. Add the drained tortellini to the skillet and gently toss to coat in the sauce. If the sauce feels too thick, add reserved pasta water a tablespoon at a time to loosen it while maintaining creaminess.
  7. Remove the skillet from heat and fold in a handful of chopped fresh basil for a bright, herbaceous finish.
  8. Spoon the creamy tortellini onto plates or bowls. Optionally, garnish with extra Parmesan or a drizzle of olive oil.
