  • 1 cup (150 g) fresh or frozen strawberries, hulled and sliced
  • 1 cup (150 g) blueberries, fresh or frozen
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • ½ cup (120 ml) simple syrup (equal parts sugar and water dissolved)
  • 1 cup (240 ml) water
  • Optional: pinch of salt
  • Optional: splash of orange liqueur

Instructions

  1. Prepare the Berry Purees (15 minutes): Blend strawberries with ½ cup (120 ml) of water until smooth. Pour into a bowl and rinse blender. Blend blueberries with remaining ½ cup (120 ml) water. Set both purees aside.
  2. Mix the Vodka Syrup (5 minutes): In a separate bowl, combine vodka, simple syrup, and lemon juice. Stir well and adjust sweetness or acidity to taste.
  3. Layer the Popsicles (10 minutes): Pour a few tablespoons of strawberry puree into the bottom of each mold, filling about one-third. Freeze for 30 minutes until partially set.
  4. Add a layer of vodka syrup mixture, filling molds another third. Freeze again for 30 minutes.
  5. Pour blueberry puree on top, filling molds to the brim. Insert popsicle sticks and freeze for at least 4 hours or overnight for best texture.
  6. Unmold and Serve: Run warm water briefly over molds to loosen popsicles. Gently remove and enjoy immediately.

Notes

Freeze each layer partially before adding the next to keep colors distinct. Adjust sweetness as alcohol dulls sweetness. Use standard 40% vodka for best freezing results. For a creamier texture, add a splash of coconut milk in berry layers. Store popsicles in airtight container up to 2 weeks.
