A simple, fresh, and easy-to-make summer cocktail combining juicy peaches, fresh mint, and smooth bourbon for a refreshing and flavorful drink.

  • 2 ripe peaches, pitted and sliced
  • 810 fresh mint leaves, plus extra for garnish
  • 2 ounces (60 ml) bourbon whiskey
  • 1 ounce (30 ml) simple syrup (equal parts sugar and water, dissolved)
  • 0.75 ounces (22 ml) fresh lemon juice (about half a lemon)
  • Ice cubes (large cubes preferred)
  • Splash of sparkling water or club soda (optional, about 1-2 ounces/30-60 ml)

Instructions

  1. Wash the mint, pit and slice the peaches, and juice the lemon.
  2. Place peach slices and mint leaves in the bottom of a cocktail shaker. Gently muddle for about 30 seconds to release juices and mint oils without over-muddling.
  3. Add 2 ounces bourbon, 1 ounce simple syrup, and 0.75 ounces fresh lemon juice to the shaker.
  4. Fill the shaker halfway with ice, secure the lid, and shake vigorously for 15-20 seconds until cold and frosty.
  5. Strain the cocktail into a glass filled with fresh ice cubes to remove peach bits (optional).
  6. Top with a splash of sparkling water or club soda if desired.
  7. Garnish with a fresh mint sprig (slapped between palms to release aroma) and a thin peach slice on the rim.

Notes

Gently muddle mint to avoid bitterness. Use ripe peaches for best juice and flavor. Large ice cubes melt slower to keep the drink cold without dilution. Adjust sweetness by adding more simple syrup if peaches are not juicy enough. Prepare each cocktail fresh for best flavor; muddled peach and mint mixture can be stored separately up to 24 hours in the fridge. For a sugar-free option, use sugar substitute syrup or omit simple syrup.
