  • 3 large eggs, room temperature

  • 1/2 cup Dutch-process cocoa powder

  • 1 cup real maple syrup (Grade A or B)
  • 2 tablespoons bourbon
  • 1 cup light brown sugar, packed
  • 4 tablespoons butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. Melt 1 cup of softened butter in a microwave-safe bowl or saucepan. Let cool slightly.
  3. Whisk melted butter and granulated sugar together until combined like wet sand.
  4. Add eggs one at a time, whisking well after each addition. Stir in 2 teaspoons vanilla extract.
  5. Sift or whisk together flour, cocoa powder, and 1/2 teaspoon salt. Fold into wet mixture until just combined. Do not overmix.
  6. Spread batter into prepared pan and bake for 20 minutes. Edges should be set, center slightly soft.
  7. While base bakes, whisk maple syrup, brown sugar, 4 tablespoons melted butter, 1 egg, 1 teaspoon vanilla, and 1/4 teaspoon salt until smooth. Stir in pecans.
  8. Remove pan from oven. Pour pecan mixture over partially baked brownie base and spread evenly.
  9. Return to oven and bake for another 20-25 minutes until topping is bubbly and set.
  10. Cool completely in pan on a wire rack (1-2 hours) before cutting to allow topping to set.

Notes

Do not overmix the brownie batter to maintain a fudgy texture. Ensure the brownie base is partially baked before adding the topping to prevent overflow. Toasting pecans beforehand enhances flavor. Brownies are best served at room temperature and can be frozen for up to three months.
