  • 6 slices thick-cut bacon, cooked until crispy and chopped
  • 12 slider buns (Hawaiian-style buns recommended)
  • 6 slices sharp cheddar cheese, halved
  • 1 small yellow onion, finely diced
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • ½ cup (120ml) BBQ sauce (Sweet Baby Ray’s recommended)
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon honey
  • Optional toppings: pickle slices, leafy lettuce or baby spinach, tomato slices

Instructions

  1. Cook the bacon in a cold skillet over medium heat until crispy, about 7-9 minutes, flipping occasionally. Drain on paper towels and chop into bite-sized pieces. Save some bacon fat if desired for cooking patties.
  2. In a large mixing bowl, combine ground beef, mayonnaise, garlic powder, smoked paprika, diced onion, salt, and pepper. Mix gently until just combined.
  3. Divide the beef mixture into 12 equal portions (about 2 ounces / 57g each) and shape into small, flat patties slightly larger than the slider buns.
  4. Heat a skillet over medium-high heat. Add bacon fat or oil if needed. Cook patties about 3 minutes per side until browned and cooked through (internal temp ~160°F / 71°C). Place halved cheddar slices on patties during last minute to melt.
  5. Whisk together BBQ sauce, Worcestershire sauce, and honey in a small bowl.
  6. Preheat oven to 350°F (175°C). Place slider buns on a parchment-lined baking sheet. Spread BBQ sauce on bottom halves, add cheeseburger patties, sprinkle chopped bacon, drizzle more BBQ sauce, add optional toppings, then cover with top buns.
  7. Wrap the baking sheet tightly with foil and bake for 10-15 minutes to meld flavors and warm buns.
  8. Remove foil and serve warm.

Do not overmix the beef to keep sliders tender. Use a meat thermometer to ensure patties reach 160°F for safety and juiciness. Cook bacon low and slow for crispiness. Wrapping sliders in foil traps steam and melds flavors without drying buns. Mayo in beef mixture keeps patties moist. Sliders can be assembled ahead and refrigerated or frozen unbaked.
