  • 6 slices thick-cut bacon
  • 4 slices or 1 cup shredded sharp cheddar cheese
  • 8 large iceberg or romaine lettuce leaves, washed and dried
  • 1 tablespoon Dijon mustard
  • 1/4 cup sliced pickles
  • 1 small yellow onion, finely chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon butter

Instructions

  1. Rinse lettuce leaves under cold water and pat dry thoroughly with paper towels or a salad spinner. Chop the onion finely and slice pickles. Set aside.
  2. Place bacon strips in a cold skillet, then turn heat to medium. Cook for 8–10 minutes, flipping occasionally, until crispy but not burnt. Transfer to paper towels to drain. Once cool, chop into bite-sized pieces.
  3. Wipe out excess bacon fat if there’s too much, leaving about 1 tablespoon in the pan. Add butter and heat until melted.
  4. Add ground beef, breaking it apart with a spatula. Stir in chopped onion, garlic powder, smoked paprika, salt, and pepper. Cook over medium-high heat for about 6–8 minutes, until beef is browned and onions are soft.
  5. Reduce heat to low, spread the cooked beef evenly in the skillet, and place cheese slices on top. Cover with a lid or aluminum foil for 2–3 minutes until cheese melts nicely.
  6. Lay out lettuce leaves on a serving plate. Spoon a generous amount of the cheesy beef mixture onto each leaf. Top with chopped bacon, a dab of Dijon mustard, and pickle slices.
  7. Serve immediately while the beef is warm, cheese is melty, and lettuce remains crisp.
