  • 1/4 cup (50g) packed brown sugar
  • 1 small yellow onion, finely diced
  • 1/2 cup (50g) plain or Italian seasoned breadcrumbs
  • 1 large egg, room temperature
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 cup (60ml) milk (whole or 2%)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/4 cup (60ml) ketchup
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup crispy fried onions (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or a little oil to prevent sticking.
  2. In a medium bowl, combine ground beef, finely diced onion, breadcrumbs, egg, milk, minced garlic, Worcestershire sauce, salt, pepper, and chopped parsley. Mix gently until just combined.
  3. Divide the meat mixture evenly into the muffin cups, filling each about 3/4 full. Press gently to shape the meat into muffin forms without packing too tightly.
  4. In a small bowl, mix ketchup, brown sugar, and smoked paprika until smooth to make the glaze.
  5. Brush the glaze generously on top of each meatloaf muffin using a basting brush.
  6. Sprinkle about 1 teaspoon of crispy fried onions over each glazed muffin.
  7. Bake in the preheated oven for 25-30 minutes until cooked through (internal temperature of 160°F/71°C) and the glaze is bubbly and caramelized.
  8. Let the muffins cool in the tin for 5 minutes before removing to help them firm up.

Notes

Do not overmix the meat to avoid dense muffins. Use ground beef with around 20% fat for moistness. Apply the glaze before baking to caramelize properly. If topping browns too fast, tent with foil halfway through baking. Let muffins rest before removing from tin. For gluten-free, substitute breadcrumbs with almond flour or gluten-free panko. For dairy-free, use almond or oat milk and dairy-free crispy onions.
