  • 4 medium-sized Yukon Gold or russet potatoes, peeled and diced
  • 1 pound of breakfast sausage, crumbled
  • 1 medium onion, finely chopped
  • 1 large bell pepper, diced
  • 4 large eggs, cooked to your preference
  • 1 cup of shredded cheddar or Monterey Jack cheese
  • 2 tablespoons of olive oil or vegetable oil
  • Salt
  • Pepper
  • Paprika
  • Garlic powder
  • Optional toppings: sour cream, green onions, hot sauce, avocado slices

Instructions

  1. Peel and dice the potatoes into bite-sized cubes. Chop the onion and bell pepper. Set everything aside.
  2. Heat a large skillet over medium heat. Add the sausage and cook, breaking it up with a spatula, until browned and fully cooked (about 8 minutes). Remove the sausage and set it aside.
  3. In the same skillet, add the oil and heat over medium-high. Once hot, add the diced potatoes in a single layer. Season with salt, pepper, paprika, and garlic powder. Cook for 12-15 minutes, stirring occasionally, until the potatoes are golden and crispy.
  4. Reduce the heat to medium and stir in the chopped onion and bell pepper. Cook for another 5 minutes, or until softened.
  5. Return the cooked sausage to the skillet and toss everything together. Adjust seasoning to taste.
  6. In a separate pan, cook the eggs to your liking—scrambled, sunny-side up, or poached.
  7. Divide the potato and sausage mixture among bowls. Top with eggs, shredded cheese, and any optional toppings like sour cream or green onions.

Notes

For extra crispy potatoes, soak them in cold water for 15 minutes after dicing, then pat them dry completely before frying. Cook the sausage and potatoes separately to ensure perfect textures.
