  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce

  • Black pepper to taste (about 1/2 teaspoon for beef)
  • 2 tablespoons butter or oil (for caramelizing onions and cooking patties)

Instructions

  1. Caramelize the onions: Heat 1 tablespoon of butter or oil over medium-low heat in a skillet. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown and sweet, about 20-25 minutes.
  2. Prepare the beef mixture: In a mixing bowl, combine ground beef with Worcestershire sauce, salt, and black pepper. Mix gently until just combined.
  3. Heat the skillet: Wipe out the pan if needed and add 1 tablespoon of butter or oil. Heat over medium-high until hot.
  4. Form and smash the patties: Divide beef into 8 equal portions (~2 ounces each). Place one portion in the skillet and press down firmly with a spatula to flatten to about 1/4 inch thick. Repeat for all patties, cooking in batches.
  5. Cook the patties: Cook undisturbed for 2-3 minutes until edges are browned and crisp. Flip and cook another 2 minutes. Add a pinch of cheese on top during the last minute to melt.
  6. Warm the tortillas: While patties cook, warm tortillas in a dry skillet or wrapped in foil in a 300°F (150°C) oven until soft and pliable.
  7. Prepare the creamy sauce: Whisk together mayonnaise, sour cream, garlic powder, smoked paprika, and a pinch of salt in a small bowl. Adjust seasoning to taste.
  8. Assemble the tacos: Place a warm tortilla on a plate. Layer with a smashed burger patty, a spoonful of caramelized onions, a drizzle of creamy sauce, and a sprinkle of shredded cheddar cheese. Repeat for each taco.

Notes

Do not overcrowd the pan when cooking patties to maintain high heat for a crispy crust. Lower heat and add a splash of water if onions cook too fast or start to burn. Use a sturdy metal spatula for smashing patties. Caramelized onions can be made ahead and stored refrigerated for up to 2 days. Warm tortillas wrapped in a damp paper towel to keep them soft.
