These Sparkling Rosemary Sugared Cranberries are a quick and easy holiday garnish that looks stunning with minimal effort. Infused with rosemary and coated in sugar, they’re perfect for cocktails, cheese boards, and desserts.

Ingredients

Scale
  • 12 oz (340 g) fresh cranberries
  • 1 cup (200 g) granulated sugar, divided
  • ½ cup (120 ml) water
  • 3–4 fresh rosemary sprigs
  • Optional: 1 tablespoon sanding sugar or coarse sugar for extra sparkle

Instructions

  1. Rinse fresh cranberries under cold water, discarding any soft or bruised ones. Pat completely dry with paper towels.
  2. In a small saucepan, combine ½ cup (100 g) sugar and ½ cup (120 ml) water. Add 3-4 fresh rosemary sprigs. Bring to a gentle boil over medium heat, stirring until sugar dissolves. Reduce heat to low and simmer for 3-4 minutes. Remove from heat and let steep for 5 minutes.
  3. Remove rosemary sprigs from syrup using a slotted spoon. Let syrup cool for about 10 minutes until warm but not hot.
  4. Place dried cranberries in a medium bowl. Pour warm rosemary syrup over them and gently stir to coat. Let sit for 2-3 minutes, stirring occasionally.
  5. Using a slotted spoon, transfer cranberries to a wire rack set over a baking sheet (or parchment-lined baking sheet). Let drain for about 5 minutes until slightly tacky.
  6. Place remaining ½ cup (100 g) granulated sugar in a shallow bowl. Working in small batches, roll cranberries in sugar to coat evenly. Transfer to a clean parchment-lined baking sheet in a single layer.
  7. Let cranberries dry at room temperature for at least 2 hours, or until sugar coating is firm and dry.
  8. Optional: Garnish with small fresh rosemary sprigs before serving.

Notes

Rushing the drying step leads to sticky cranberries. Use fresh cranberries, not frozen. For extra sparkle, mix sanding sugar with granulated sugar. Store in a single layer in an airtight container at room temperature for up to 48 hours. Do not refrigerate.
