Sweet and Spicy Jalapeño Jam

A sticky, glossy jalapeño jam with a perfect balance of sweet and spicy, ideal for cream cheese appetizers and versatile for many dishes.

Ingredients

  • 10 medium fresh jalapeños, finely chopped (seeds optional for heat control)
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon grated fresh ginger (optional)

Instructions

  1. Wash and finely chop about 10 fresh jalapeños. Remove seeds if you want a milder jam but keep some seeds for heat. (Approx. 10 minutes)
  2. In a medium heavy-bottomed saucepan, combine 2 cups granulated sugar, 1 cup apple cider vinegar, 1/2 cup water, and 1/2 teaspoon salt. Stir over medium heat until the sugar dissolves completely. (About 5 minutes)
  3. Add the chopped jalapeños and optional 1 teaspoon grated fresh ginger. Stir to combine. (2 minutes)
  4. Bring the mixture to a boil, then reduce heat to low. Let it simmer uncovered, stirring frequently, until the liquid thickens and the jam reaches a syrupy consistency, about 20-25 minutes. Test by coating the back of a spoon and running your finger through it to see if it leaves a clear path.
  5. Turn off the heat and stir in 2 tablespoons fresh lime juice. (1 minute)
  6. Let the jam cool to room temperature in the pan, then transfer to sterilized jars or airtight containers. Refrigerate for up to 3 weeks.

Notes

Do not rush the simmering step to avoid a runny jam. Stir often to prevent burning. Use a cold spoon or plate to test jam thickness. Removing seeds reduces heat. Store refrigerated up to 3 weeks. Can freeze up to 3 months.
