Ingredients

Scale
  • 34 pounds beef brisket (well-marbled, grass-fed preferred)
  • Salt and freshly ground black pepper, to season
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 medium yellow onions, sliced
  • 4 large carrots, peeled and cut into chunks
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 3 cups beef broth (low-sodium preferred)
  • 1 cup dry red wine (Cabernet Sauvignon or Merlot, optional)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 45 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 sprigs fresh rosemary
  • Optional: 2 large potatoes, peeled and quartered

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the brisket generously with salt and freshly ground black pepper on all sides.
  3. Heat olive oil in a Dutch oven over medium-high heat until shimmering. Sear the brisket for 4-5 minutes per side until a deep golden-brown crust forms. Do not move it too soon.
  4. Remove the brisket to a plate and set aside. Lower heat to medium and add sliced onions, carrots, and celery. Sauté for 5-6 minutes until softened and fragrant, stirring occasionally.
  5. Add minced garlic and cook for another minute, careful not to burn it.
  6. Stir in tomato paste and cook for 2 minutes to deepen flavor.
  7. Pour in red wine, scraping up browned bits from the pot bottom. Let the wine reduce by half, about 5 minutes.
  8. Add beef broth, bay leaves, thyme, and rosemary. Return brisket to the pot, nestling it into the liquid and vegetables. The liquid should come halfway up the sides of the meat. Add potatoes if using.
  9. Cover the pot tightly and transfer to the preheated oven. Braise for 3 to 3.5 hours until brisket is fork-tender.
  10. Remove brisket and vegetables to a serving platter and tent with foil to keep warm.
  11. Skim excess fat from braising liquid and simmer on stove for 5-7 minutes to thicken if desired.
  12. Slice brisket against the grain into thick pieces and serve with braised vegetables and sauce spooned over the top.

Notes

For gluten-free, replace tomato paste with almond flour or gluten-free thickener. For non-alcoholic version, omit wine and add extra beef broth with a splash of balsamic vinegar. Letting the brisket rest overnight in the fridge enhances flavor. Reheat gently on stovetop to keep moist. Avoid microwaving.
