These tender brown sugar bourbon ribs are fall-off-the-bone delicious and require only 10 minutes of prep time. Cooked low and slow in a slow cooker, they offer a sticky, sweet, and smoky glaze that rivals restaurant-quality barbecue.

  • 1 full rack pork spare ribs (3–4 lbs)
  • 1 cup bourbon
  • 1 cup packed brown sugar
  • 1/2 cup ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Remove the silverskin membrane from the bone side of the ribs using a knife and paper towel for grip.
  2. Pat the ribs dry with paper towels.
  3. Season both sides of the ribs generously with salt, black pepper, garlic powder, and smoked paprika.
  4. In a medium bowl, whisk together the brown sugar, ketchup, mustard, Worcestershire sauce, cayenne pepper, and bourbon until the sugar is mostly dissolved.
  5. Place the seasoned ribs in the slow cooker, folding them if necessary to fit.
  6. Pour the bourbon-brown sugar sauce over the ribs, ensuring they are well-coated.
  7. Cover and cook on LOW for 6 to 8 hours until the meat is tender and pulling away from the bones.
  8. Remove the ribs from the slow cooker and place on a platter.
  9. Turn the slow cooker to HIGH and stir in the butter into the remaining liquid.
  10. Let the sauce bubble for 2-3 minutes until thickened and glossy.
  11. Cut the ribs into individual portions and ladle the hot sauce over the top before serving.

Notes

Remove the membrane from the ribs for better texture and flavor penetration. Do not add extra water or broth as the ribs release their own juices. For a non-alcoholic version, substitute bourbon with apple juice or beef broth. If short on time, cook on HIGH for 4-5 hours, though texture may be less tender.
