  • 1/4 cup honey (preferably raw or local)
  • 1/4 cup soy sauce (low sodium preferred)
  • 4 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1/4 cup chicken broth
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening sauce)
  • 1/2 teaspoon ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Trim and prep the pork tenderloin by removing any silver skin or excess fat. Pat dry with paper towels.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, chicken broth, black pepper, and red pepper flakes if using until smooth and well combined.
  3. Place the pork tenderloin flat in the slow cooker insert. Pour the honey garlic sauce evenly over the pork, coating all sides.
  4. Cover and cook on low for 5 to 6 hours, or until the pork reaches an internal temperature of 145°F (63°C) and is tender.
  5. Optional: Remove the pork and set aside to rest. Mix cornstarch with cold water to create a slurry. Pour the sauce from the slow cooker into a saucepan and bring to a simmer. Stir in the slurry and cook until the sauce thickens, about 2-3 minutes.
  6. Slice the pork tenderloin against the grain, drizzle with the thickened honey garlic sauce, and serve.

Notes

Do not skip trimming silver skin for tender texture. Cooking low and slow keeps pork juicy. Fresh garlic is essential for flavor. Use a meat thermometer to ensure pork reaches 145°F (63°C). Rest pork for 5 minutes before slicing to retain juices. Thickening the sauce with cornstarch slurry enhances glaze texture but is optional. Searing pork before slow cooking adds flavor but is not necessary.
