A quick and easy skillet dessert combining fudgy brownie base, gooey toasted marshmallows, and crunchy graham crackers, perfect for last-minute cravings or casual gatherings.

  • 3/4 cup (150g) granulated sugar
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (60g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (90g) chocolate chips (semi-sweet or milk chocolate)
  • 1 1/2 cups (about 120g) mini marshmallows
  • 6 sheets graham crackers, roughly broken

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt until evenly combined.
  3. Melt the butter until warm but not hot. Stir in the egg and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined; do not overmix.
  5. Fold in the chocolate chips gently.
  6. Grease an 8-inch oven-safe skillet lightly with butter or nonstick spray. Pour in the batter and smooth the top.
  7. Bake for 12 minutes until edges look set but center is still slightly gooey.
  8. Evenly sprinkle mini marshmallows over the brownie, then scatter broken graham cracker pieces on top.
  9. Return to the oven for 4-5 minutes until marshmallows are toasted golden brown; watch closely to avoid burning.
  10. Cool slightly for 5 minutes before slicing and serving warm, optionally with vanilla ice cream.

Notes

Use mini marshmallows for even toasting. Avoid overbaking the brownie base before adding marshmallows to prevent dryness. For dairy-free version, substitute butter with coconut oil and use vegan chocolate chips; replace egg with flax egg. Watch marshmallows closely during toasting to prevent burning. Leftovers keep well refrigerated for up to 3 days and can be frozen for up to a month.
