  • ⅓ cup brown sugar, packed (light or dark)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard (for glaze)
  • 1 teaspoon Worcestershire sauce (for glaze)
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a baking sheet with foil or parchment paper and place a 9×5-inch loaf pan on top.
  2. Make the panade: In a small bowl, combine ½ cup milk and 1 cup breadcrumbs. Stir until the breadcrumbs are fully saturated. Let it sit for 5 minutes.
  3. Prepare the aromatics: Finely dice the onion. Grate half of it on a box grater into a small bowl. Mince the garlic cloves. Set both aside.
  4. Mix the glaze: In a small bowl, whisk together ½ cup ketchup, ⅓ cup packed brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, and ½ teaspoon garlic powder. Set aside.
  5. Combine the meatloaf ingredients: In a large mixing bowl, combine 2 pounds ground beef (80/20), the soaked breadcrumb mixture, 2 lightly beaten eggs, the diced and grated onion, the minced garlic, 2 tablespoons Worcestershire sauce, ¼ cup ketchup, 1 tablespoon Dijon mustard, 1 teaspoon dried thyme, 1½ teaspoons kosher salt, ½ teaspoon black pepper, and the chopped parsley if using.
  6. Mix gently: Use your hands to combine everything. Mix just until evenly distributed—about 30 seconds of gentle folding and squeezing.
  7. Shape the meatloaf: Transfer the mixture to the loaf pan. Press it in gently, making sure there are no air pockets. The top should be slightly domed.
  8. Apply the first layer of glaze: Spoon about ⅓ of the glaze over the top of the meatloaf. Use a pastry brush or the back of a spoon to spread it evenly, letting some drip down the sides. Reserve the remaining glaze.
  9. Bake for 45 minutes: Place the baking sheet with the loaf pan in the oven. Bake uncovered for 45 minutes.
  10. Apply the second layer of glaze: After 45 minutes, remove the meatloaf from the oven. Spoon the remaining glaze over the top, spreading it evenly. Return to the oven and bake for another 15 minutes.
  11. Check the internal temperature: Insert an instant-read thermometer into the center of the meatloaf. It should read 160°F (71°C) for beef. If not, continue baking in 5-minute increments.
  12. Rest before slicing: Remove the meatloaf from the oven and let it rest in the pan for 10 minutes. Then carefully transfer it to a cutting board.
