This creamy, spicy, and perfectly scoopable Buffalo chicken dip is the ultimate game day appetizer. Made with simple ingredients like shredded chicken, cream cheese, and hot sauce, it’s quick to prepare and always a crowd-pleaser.

Ingredients

Scale
  • 3 cups cooked, shredded chicken (about 1 rotisserie chicken)
  • 2 (8-ounce) blocks cream cheese, softened
  • 3/4 cup Buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch or blue cheese dressing
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup crumbled blue cheese (optional, for garnish)
  • 34 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Shred the cooked chicken into small, uniform pieces.
  3. In a mixing bowl, beat softened cream cheese, hot sauce, and dressing with a hand mixer until smooth.
  4. Fold in shredded chicken, 1 1/2 cups of the shredded cheddar, and garlic powder. Season with salt and pepper to taste.
  5. Spread mixture evenly into the prepared baking dish. Sprinkle remaining 1/2 cup cheddar on top.
  6. Bake for 20-25 minutes until hot and bubbly. For a golden top, broil for 1-2 minutes (watch closely).
  7. Let rest for 5 minutes. Garnish with green onions and crumbled blue cheese (if using). Serve warm with tortilla chips, celery sticks, or other dippers.

Notes

For a make-ahead option, assemble the dip (without top cheese and garnishes) up to 24 hours in advance. Add top cheese before baking and increase baking time by 10 minutes. For a slow cooker version, combine all ingredients except top cheese and garnishes; cook on low for 2-3 hours, then add top cheese for the last 15 minutes.
