  • ½ cup unsalted butter, very cold and cubed
  • 4–6 tablespoons ice water
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 15 ounces pumpkin puree (pure pumpkin, not pie mix)
  • 12 ounces heavy cream (1 ½ cups)
  • 2 large eggs, room temperature
  • ¾ cup packed brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • 1 teaspoon vanilla extract

Instructions

  1. Pulse flour, salt, and sugar in a food processor. Add cold cubed butter and pulse 10-15 times until mixture resembles coarse meal with pea-sized butter chunks.
  2. Drizzle in ice water one tablespoon at a time, pulsing after each addition, until dough begins to clump. Do not overwork.
  3. Divide dough in half, flatten into disks, wrap in plastic, and refrigerate for at least one hour.
  4. Preheat oven to 375°F (190°C). Roll one dough disk into a 12-inch circle and transfer to a 9-inch pie dish. Trim edges and prick bottom/sides with a fork.
  5. Line crust with parchment and fill with pie weights. Blind bake for 15 minutes, remove weights, and bake 5 more minutes until lightly golden. Cool.
  6. Whisk together heavy cream, brown sugar, eggs, vanilla, spices, and a pinch of salt until sugar dissolves.
  7. Stir in pumpkin puree until mixture is completely smooth.
  8. Pour filling into pre-baked crust. Bake at 375°F (190°C) for 50-60 minutes until edges are set but center jiggles slightly.
  9. Cool completely on a wire rack for at least 2 hours before slicing.

Notes

Keep all ingredients, especially butter, very cold to ensure a flaky crust. Do not overmix the dough. Ensure pumpkin puree is not watery. Strain filling through a fine-mesh sieve for a silky texture. Blind baking prevents a soggy bottom. Cool completely before slicing to allow filling to set.
