Creamy Marry Me Chicken with Sun-Dried Tomato Sauce

  • 4 boneless, skinless chicken breasts (about 6 ounces or 170 grams each), pounded to even thickness
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1 cup (240 ml) chicken broth, homemade or low-sodium store-bought
  • 1 cup (240 ml) heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • A handful of fresh basil leaves, roughly chopped for garnish

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Pound thickest parts to about 1/2 inch thickness using a meat mallet or rolling pin (about 5 minutes).
  2. Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. Heat until hot but not smoking.
  3. Add chicken breasts and cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F or 74°C). Avoid moving them too much. Transfer to a plate and tent with foil to rest.
  4. Lower heat to medium. Add 2 tablespoons butter to the same skillet. Once melted, add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
  5. Stir in chopped sun-dried tomatoes and cook for about 1 minute to release flavor.
  6. Pour in 1 cup chicken broth, scraping up browned bits from the pan. Let simmer for 3-4 minutes until slightly reduced.
  7. Stir in 1 cup heavy cream, 1/2 cup grated Parmesan, dried Italian herbs, and crushed red pepper flakes if using. Stir gently until cheese melts and sauce thickens slightly, about 3-5 minutes. Sauce should coat the back of a spoon.
  8. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over top, and simmer together for 2 minutes to marry flavors.
  9. Remove from heat, sprinkle with fresh chopped basil, and serve immediately.

Notes

If sauce is too thin, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir in, cooking for another minute until thickened. Use medium heat to prevent cream from curdling. For dairy-free, substitute heavy cream with canned coconut milk and Parmesan with nutritional yeast. For gluten-free, verify broth ingredients. Pounding chicken ensures even cooking and juiciness.
