These light & crunchy spiced maple roasted pumpkin seeds are a revelation, with a perfect snap, warm spices, and a whisper of maple sweetness. They’re the perfect snack—light, crunchy, and just sweet enough to feel like a treat without being dessert.

  • 1 cup fresh pumpkin seeds (about 120g)
  • 4 cups water (960ml)
  • 1 tablespoon salt (18g), plus more for sprinkling
  • 2 tablespoons maple syrup (30ml)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon ground cinnamon (2.6g)
  • ½ teaspoon ground ginger (1g)
  • ¼ teaspoon ground nutmeg (0.5g)
  • ⅛ teaspoon ground cloves (0.2g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper and set aside.
  2. Place 1 cup of fresh pumpkin seeds in a colander. Rinse under cool running water, using your fingers to gently rub away any strings or pumpkin guts.
  3. In a medium saucepan, bring 4 cups of water and 1 tablespoon of salt to a rolling boil. Add the rinsed seeds and boil for exactly 10 minutes.
  4. After 10 minutes, pour the seeds into the colander and drain well. Spread them out on a clean kitchen towel or a double layer of paper towels. Pat them very dry. Let them sit on the towel for 5 minutes to air-dry.
  5. In a medium mixing bowl, whisk together 2 tablespoons of maple syrup, 1 tablespoon of olive oil, 1 teaspoon of cinnamon, ½ teaspoon of ginger, ¼ teaspoon of nutmeg, and ⅛ teaspoon of cloves.
  6. Add the dried seeds to the bowl with the maple spice mixture. Stir with a spatula until every seed is evenly coated.
  7. Pour the coated seeds onto the prepared baking sheet. Spread them out into a single, even layer.
  8. Place the baking sheet in the preheated oven and roast for 12 minutes. After 12 minutes, remove the sheet from the oven and give the seeds a good stir with a spatula. Spread them back into a single layer and return to the oven.
  9. Roast for another 8-12 minutes, keeping a close eye on them after the 8-minute mark. The seeds are done when they are a deep, golden brown and the maple syrup has caramelized.
  10. Remove the baking sheet from the oven and let the seeds cool directly on the pan for at least 15-20 minutes. Once cool, sprinkle with a tiny pinch of flaky sea salt, if desired.

Notes

Boiling the seeds in salted water for 10 minutes is the single most important step for achieving a light, crunchy texture. Do not skip it. Make sure seeds are in a single layer on the baking sheet to avoid steaming. Watch the seeds carefully in the last 5 minutes of roasting as maple syrup can burn easily. Let seeds cool completely before eating; they will be soft and chewy right out of the oven. Store in an airtight container at room temperature for up to 2 weeks. If they soften, re-crisp in a 300°F (150°C) oven for 3-5 minutes.
