  • 1/2 cup (120 ml) freshly squeezed orange juice
  • 3 tablespoons (about 30 g) gelatin powder
  • 1 teaspoon (around 5 g) vitamin C powder (ascorbic acid)
  • 1/4 teaspoon (approx. 1 g) zinc powder (food-grade zinc citrate)
  • 2 tablespoons (30 ml) raw honey or maple syrup
  • 1/2 cup (120 ml) filtered water

Instructions

  1. Bloom the gelatin: Sprinkle 3 tablespoons (30 g) of gelatin powder over 1/2 cup (120 ml) of cold filtered water. Let it sit for about 5 minutes until thickened and spongy.
  2. Warm the liquid base: In a small saucepan, gently warm elderberry syrup, orange juice, and honey or maple syrup over low heat, stirring occasionally. Keep temperature around 110°F (43°C), do not boil.
  3. Add vitamin powders: Stir in 1 teaspoon vitamin C powder and 1/4 teaspoon zinc powder until fully dissolved, stirring gently to avoid lumps.
  4. Incorporate bloomed gelatin: Add the thickened gelatin to the warm liquid mixture and whisk continuously until completely dissolved, about 2-3 minutes, ensuring a smooth mixture.
  5. Pour into molds: Carefully fill silicone gummy bear molds using a dropper or small spoon. Tap molds lightly to release air bubbles.
  6. Chill to set: Refrigerate molds for at least 2 hours or until gummies are firm to the touch.
  7. Unmold and store: Gently pop gummies out of molds and store in an airtight container in the refrigerator for up to two weeks or freeze for longer storage.

Notes

Do not boil the mixture to preserve vitamin C and gelatin setting power. Bloom gelatin properly to avoid lumps. Use fresh juice for best flavor. Work quickly when pouring into molds to avoid thickening. For firmer gummies, increase gelatin by 1/2 tablespoon. Dust gummies with cornstarch or powdered sugar if sticky. Agar powder can be used as a vegan alternative but will yield a firmer texture.
