  • 1 cup (245g) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120g) plain Greek yogurt (full-fat or 2%)
  • 2 large eggs, room temperature
  • 1/3 cup (80ml) honey or maple syrup
  • 3 tablespoons melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup optional add-ins: chocolate chips, chopped nuts, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a large bowl, whisk together the eggs, Greek yogurt, pumpkin puree, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract until smooth and creamy.
  3. Add the rolled oats, pumpkin pie spice, baking soda, and salt. Stir with a rubber spatula until just combined. The batter will be thick and chunky. Do not overmix.
  4. If using add-ins, fold them in gently with a few turns of the spatula.
  5. Divide the batter evenly among the 12 muffin cups, filling each almost to the top. Use the back of a spoon or scoop to spread the batter if needed.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden brown and spring back when lightly pressed.
  7. Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

For best results, let the batter rest for 10 minutes before baking to allow oats to absorb liquid. Use room temperature ingredients to prevent coconut oil from seizing.
