  • 2 large eggs, room temperature

  • ½ cup (50g) dark cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips
  • 1 cup (120g) powdered sugar
  • 1 tablespoon meringue powder (optional)
  • 23 tablespoons water or milk
  • 2 pieces candy corn or yellow M&Ms

Instructions

  1. Preheat oven to 350°F (175°C). Line a sheet pan with parchment paper, leaving overhang for easy lifting.
  2. Melt 1 cup unsalted butter in a microwave-safe bowl in 30-second bursts. Let cool for 5 minutes.
  3. In a large bowl, whisk together melted butter, 1 cup dark brown sugar, and ½ cup granulated sugar until smooth and glossy.
  4. Whisk in eggs one at a time, then add vanilla extract. Mixture should be thick and shiny.
  5. In a separate bowl, whisk together 2 cups flour, ½ cup dark cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt.
  6. Fold dry ingredients into wet in two additions, mixing until just combined. Do not overmix.
  7. Fold in 1 cup semi-sweet chocolate chips. Dough will be thick and sticky.
  8. Cover bowl with plastic wrap and refrigerate for 30 minutes.
  9. Transfer chilled dough to prepared sheet pan. Using moistened hands, press into an even ¼-inch thick layer, leaving 2 inches around edges.
  10. Bake on middle rack for 12-15 minutes. Edges should be set and slightly cracked; center will look soft.
  11. Cool on pan for 10 minutes, then transfer to a wire rack to cool completely (about 45 minutes to 1 hour).
  12. Make icing: Whisk together 1 cup sifted powdered sugar, 1 tablespoon meringue powder (if using), and 2 tablespoons water. Add more water until thick but flows slowly. Transfer to a piping bag or ziplock bag with a tiny corner snipped off.
  13. Pipe cat face on cooled cookie cake: two triangular ears, two oval eyes (place candy corn or M&Ms into wet icing), a small nose, a ‘w’ mouth, and three whiskers on each side.
  14. Let icing set for at least 30 minutes before slicing.
  15. Slice and serve using a sharp knife, cutting around the cat face first to preserve the design.

Notes

Don’t skip chilling the dough—it prevents excessive spreading. Use a light hand when measuring cocoa and flour (spoon and level). If icing lines are shaky, smooth with a toothpick while wet. Cookie cake tastes even better the next day.
